I am new to StarTools and have a lot to read in the documentation and in the forum.
My first question is whether it is possible to interrupt a treatment, save something somewhere and resume the treatment later.

Welcome to the forums!
StarTools indeed does not let you save the full Tracking state. The reasons for that is one of practicality; the Tracking data mining files can become huge during processing. Saving multiple copies will quickly fill up your disk.
Fortunately, this is not too much of a problem in practice, because workflows in StarTools are meant to be very short and targeted, with a clear start and end to the workflow. A StarTools user does not typically endlessly tweak an image.
